The Land

I am Christopher Shaw, from Pamplona born in California, who lives and dreams in a small town located at the foot of the Pyrenees and main enclave of the Camino de Santiago. I live in a land of diversity, wealth and fusion between the wild nature of the north and the fertile orchards of the south. I only missed one thing: the spiciness of my land. But this fortunate and generous land gave me the natural ingredients to make a handmade sauce, with a unique composition and an extraordinary flavor.

THE FRUITS OF THE EARTH

With the arrival of autumn, the fields of the Ribera Alta of Navarra are dotted with an intense red and in the towns of the area, the canneries begin a frenetic activity. The pepper of the Piquillo bursts every season with its customary color soaking the air of aromas of firewood and charcoal. Because if something characterizes the authentic Piquillo pepper of Navarra of other similar peppers is that, after roasting direct flame, it is peeled and cleaned without the fruit touching the water or any other chemical solution. This ensures its unparalleled flavor.

The Riojan Alegrías are similar to the Piquillo Pepper but smaller in size. It is a variety of spicy also called pepper “villain” or chilli peppers. Its intense, vibrant spice provides color and joy to the dishes.

And together they are invincible.

EL PICANTE NAVARRO JAMACUCO SALSA

The sauce

Jamacuco. Sudden sensation that alters our senses for an instant and then retreats into oblivion. It's the magic of fireworks. It is the descent of a roller coaster. It has the intensity of a bonfire on the night of San Juan. This is Jamacuco. A spicy sauce that reminds us of the cool nights on the Sacramento River and the sunrises in Yosemite Valley. It is made with Piquillo de Lodosa and Alegrías, two varieties of pepper that are cultivated with care and dedication in Navarra, a fertile and grateful land.

THE RECIPE

When one moves away from home, one of the things missed the most is gastronomy (food). Suddenly, the memories of childhood, the products from the earth, flood the memories and the senses, leaving us wanting to try again what we left behind. After many tests I have obtained a unique recipe, which unites my culinary experience forged in the border of Mexico, with the products and the canning tradition of my host land.

Piquillo Pepper

Although the pepper is a plant native to South America, the piquillo pepper belongs to a unique and indigenous botanical variety, unique within its own genus, here in the geographical realm of Lodosa, and between the neighboring municipalities reach their maximum gustatory quality.

Alegría riojana

Alegrías de Navarra

A variety of chilli of character and color very similar to the Piquillo pepper of Lodosa, although of smaller size. They get this name for the “joy” that it brings to the palate when they are very spicy, although its heat is not persistent.
